90 Pounds?!

This year Jonathan and I decided we would purchase a half of a grass-fed calf for our beef needs. Overall the process was very smooth. Yesterday I drove about an hour from our house to pick up our order. Our half weighed 200 lbs "hanging weight" and here is what we received finished:
  • One Eye of Round 2.8 lbs
  • Two Bottom Round Roasts 1.7 lbs each
  • Two Sirloin Tip Roasts 3 lbs each
  • Two Chuck Roasts 2.9 lbs each
  • Four Sirloin Steaks 1.3 lbs each
  • Eight NY Strip Steaks
  • Five Filets
  • Seven Packages of Cubed Steak ~6.4 lbs total
  • Sixty Packages of Ground Beef ~90 lbs total
  • Four Packages of Stew Beef ~6 lbs total
  • Six Packages of Livers (Five calves were slaughtered and they gave us all the livers since no one else wanted them! Not sure how we ended up with six packages unless they threw in an extra.)
  • One Standing Rib Roast 6.6 lbs
  • Bones for making broth

Based upon my estimates our finished weight was approximately 135.2 lbs (67.6 % of the hanging weight). The sides were "dry hung" (pretty much left hanging for two weeks) which affects finished weight, but according to my research our yield was pretty good.
